The fresh oysters of Leucate

About 50 years ago, the village of Leucate on the Lagoon of Salses-Leucate in the Aude department started dabbling in oyster farming. Oyster breeders first settled at the ‘Caramoun’ (which gave its name to one of the varieties of oysters produced locally). They then moved to the ‘Grau de Leucate’ in 1974. Today, there are about twenty oyster huts on the shores of Leucate. The farmers, after harvesting their mollusks, serve the customers directly in their workshops.
