The PDO (Protected Designation of Origin) of Salers cheese has evolved over time. In 1961, a first designation of origin, Salers Haute Montagne, specified the production period (May 20-September 30), the breed of cows (Salers), and the altitude of the pastures (over 2,788 ft / 850 m). Eighteen years later, in 1979, the designation of origin Salers no longer stipulated a minimum altitude but limited the geographical area of production to the department of Cantal, the Sancy Massif, and a few localities in Haute-Loire and Corrèze. It also removed any notion of cow breed and extended the production period (May 1-October 31). Finally, in 2000, a last decree reduced the designation area to the Cantal, Cézallier massif, and Monts-Dore and extended the production period (April 15-November 15), on condition that the cows are grass-fed.
