In autumn, weeds grow between the rows of vines. They need to be pulled up and the land ploughed before the frosts. Indeed, weeds would retain the frost and vines would suffer from the cold. It is thus essential to prepare the soil. In Champagne, at the Marguet estate, ‘décavaillonnage’ is practised only with draught horses. They feel the roots with the tip of their hoofs and stop before damaging them. A tractor is faster but can be more damaging to the vines.
