The veraison process lasts more or less fifteen days. This essential time in the vine life is the moment when the grape swells and changes from its green color to its black color. It darkens until it takes on its mature color. The grains get bigger and softer. Veraison ends when 70% of the grains on the bunch have changed to their red-black color.
