Already appreciated by Charlemagne and Henri IV, the cheese from the Brie region found its letters of nobility in 1815 at the Congress of Vienna. During this meeting of the main victorious countries over Napoleon I, Talleyrand, the representative of King Louis XVIII, organised a dinner. All had to bring a cheese of their choice and all enjoyed the 52 regional cheeses presented. At the end of the congress, Prince Metternich, who represented Austria, described Brie cheese as “the prince of cheeses and the first of desserts”. It was not until the 19th century that its definitive name, Brie de Meaux, appeared.
