The ‘Caramoun’ oyster from Leucate is named after the place where the pioneers of the local oyster farming settled more than 50 years ago. The oyster is cultivated using oyster breeding tables which reproduce the rhythm of the tides by keeping them out of the water during certain periods. It is this test that makes the mollusk stronger and gives it its firmer, crunchier texture and an unforgettable taste in the mouth, with a nutty aroma.
