Leucate oysters are produced in oyster parks disseminated on the pond. Flat-bottomed boats then allow oyster farmers to reach these parks to harvest their production. Almost comparable to living fossils, many species of oysters have already existed in the past. Prehistoric men supposedly already feasted on them! They play an important ecological role because of the fact that their production under 'breeding tables' has a very low environmental impact.
