The aging cellars of Habitation Clément

In the six aging cellars of Habitation Clément in Martinique are distributed 12,000 oak barrels stacked in pyramids. They contain over two million liters of rum. The estate's agricultural rum has been produced there since 1917 and takes on the water-soluble tannins of the wood. Four cellars - the Homère Clément cellar (1917), the Charles Clément cellar (1996), the Georges-Louis Clément cellar (1999), and the Jean-José Clément cellar (2006) - are open to the public. They allow visitors to discover the assembly and aging activities of rum before bottling.
