In Rapa, taro is a daily meal and can be prepared in a lot of ways. However, the most appreciated meal is the popoi or taro paste. The process consists of boiling taro roots and crush it until it becomes a paste. Then, this paste can be wrapped up in a basket made of leaves and suspended in a tree for two days. At the end of this process, it can be can be consumed as a such. Women only are in charge of this process they compete to cook the best popoi possible.
