Still consumed by the Melanesian populations of New Caledonia, taro was - along with yam - the root vegetable at the base of Kanak food before the arrival of Europeans. Like yam, it enters into the composition of 'bougna', the Kanak stew. Colocasia esculenta is the most widely cultivated species. Round in shape, it is covered with a hard bark.
