The Camembert requires a whole manufacturing process further reinforced by specific criteria to obtain the PDO label. It must be molded in five layers spaced at least 45 minutes apart. At least 0.48 gal (2.2 liters) of milk is needed to obtain some 0.85 lb (385 g) of cheese that would weigh around 0.62 lb (285 g) once ripened. The process hence requires patience as only time will develop the cheese's flowery rind, usually within 15 days.
