The Champagne vines are firmly rooted in tradition. They grow on four grape production zones that group together seventeen champagne terroirs. The current form of the champagne comes from Dom Pérignon, who explored its production since his arrival at Hauvillers Abbey in 1668 and developed the Traditional Method, called the Champagne Method before 1994. He invented the principle of the second fermentation in the bottle and the cork that prevents the bottles from exploding. Dom Pérignon was also the first winemaker to produce a white wine with black grapes, a unique specificity of the Champagne region.
