A particular attention is paid to the selection of the coffee cherries because their maturity influences the taste of the beans they contain. Unripe (too green) or overripe (too black) coffee cherries give a certain bitterness or pungency to the coffee beans while their good maturity optimizes the sugar concentration of the beans.
