Today unexploited, the Salins d'Hyères are salt marshes of human origin that date back to Antiquity and the creation of a salt route by the Phocaeans and Romans. Until 1995, salt was collected there in shallow basins following the evaporation of seawater under the combined action of sun and wind. This agricultural type operation, called saliculture or saunerie, employed salt growers and workers called saliculteurs, sauniers or paludiers. Their know-how was based on the optimal use of the natural conditions, especially meteorological, and on the individual and collective maintenance of the salt works.
