Salers, three in one
Salers (masculine gender) is a raw milk cheese made on a farm and molded into fourmes. Its name comes from its rural locality of origin, whose medieval village extends on a "planèze" in the western end of the Cantal volcanic massif. The name "Salers" (feminine gender) designates a long and curly-haired dairy cow from the Massif Central, recognizable by its plain mahogany-colored dress.
