Around the year 750, Fulrad, Archichapelain of Charlemagne, established a monastery near Orschwiller. A village gradually formed around it in the 14th century and became the city of Saint Hippolyte. Sieges, looting, destructions, epidemics ravaged it over the centuries but did not prevent it from staying populous and flourishing. The wine-growing town, located on the Wine Route at an altitude of 820 ft (250 m), is observable from the heights of Haut-Koenigsbourg. It is renowned for its Pinot Noir, the Red of Saint Hippolyte.
