The Norman cow breed is renowned for its dairy qualities, and one animal produces about 16,093 lbs (7,300 kg) of milk per year. Its milk is also highly suitable for dairy products as its fat content reaches 1.5 oz (42.8 g) per liter for 1,2 oz (34.3 g) of protein, which is a higher rate than Holsteins and Montbéliardes. The Norman cow is the result of a long and patient selection process that began after the Second World War.
