Once the wine is well-rested, its clarity is restored by eliminating the deposit. The sediments (yeasts and riddling additives) accumulated are eliminated during disgorging. This operation, called remuage (riddling), consists of rotating the bottle successively to the right and the left. It is then raised to take the deposit to the neck. The process takes place without machines, and a professional stirrer can handle some 40,000 bottles a day.
