Rice growing based on flooded rice is essential for regulating the Camargue ecosystem. The irrigation of the plots makes it possible to desalinate the soils by leaching them and to diversify the crops by introducing dry crops of cereals (durum wheat), fodder (alfalfa) or oilseeds (soya, sunflower). The frequency of rice in the rotation is linked both to the ecological constraint of the soil salinity and to the economic opportunity of the price of rice.
