Already in 1875, his ancestor boasted of innovative methods. In 2013, Benoît Marguet, the owner of the Champagne Marguet estate in Ambonnay, embarked on biodynamic viticulture, using phytotherapy and aromatherapy. He cultivates his vines the old-fashioned way, with two Ardennes draught horses named Titan and Urban. The horses respect the soil and the vines by also participating in its economic and ecological approach. Its flagship cuvée is called Shaman (a Grand Cru Ambonnay Champagne), as a way of reconnecting people and nature.
