Harvesting coffee cherries is a delicate stage. It can be done all at once, but the yield is low because all the fruits do not ripen at the same time, so there is a lot of waste. The alternative, more expensive in terms of labor but with an optimized yield, consists in picking only the ripe cherries by hand and one by one, passing 7 to 8 times on the same coffee tree.
