Carrot harvesting
Carrots are harvested when they are well formed, about 3 months after sowing. In Tubuai, calibration is done immediately after harvest. The carrots are washed, calibrated and placed in a cold room. The Polynesian buyer favors carrots 4.7 to 8.6in (12/22cm) long and 1.9 to 2.3in (50/60mm) in diameter. The carrots should be cylindrical, regular and well trimmed.
