For the manufacture of Cantal AOP cheese, the milk can be used raw or heated. It is thus called thermized or pasteurized milk. Raw milk retains its original microflora and its smoothness, thus bearing more of the imprint of its terroir. Pasteurization, on the other hand, is a guarantee of regularity and health security. It, therefore, promotes the marketing, universal consumption, and conservation of milk and the dairy products derived from it.
