Benoît Marguet owns 7.3 hectares of vines in Ambonnay and 0.7 hectare in Bouzy, all of which are biodynamically cultivated. His wines are produced without the addition of sulfites, without any dosage and the parcel-based vintages are magnificent. The approach of this young winemaker – he started in 2008 – is based on a great respect for nature, even if the yield is lower. He has reintroduced the use of draught horses to work the land in his vineyards in order to respect and enrich the soil. He still produces nearly 90,000 bottles per year.
