After draining, the curd intended for Cantal PDO cheese manufacturing is placed in a racking cloth and passed through a tomme press. It undergoes a series of pressing before the crushing and molding phases of the tomme thus obtained. The stainless steel press consists of a frame and a container fitted with a grid. The pressure is exerted by a harrow actuated by a pneumatic cylinder equipped with a pressure distributor and regulator.
