Once curdled, the milk used to make Cantal PDO cheese is put under a press in a linen rack to be drained. The operation is repeated several times, requiring the cheesemaker to go through a series of physical manipulations to turn the blocks of fresh tomme in order to extract as much liquid as possible. This process results in the drying of the cheese mass within two hours.
