Pressing and draining in linen fabrics

Linen fabrics of various weights and fibers diameter are used at different stages in the production of uncooked pressed cheeses such as Cantal PDO. They serve in particular to draw the curd from the vats while allowing the whey to drain. The fabrics are also used to wrap the curd cake for its pressing into a tomme. Their texture then allows a more homogeneous draining.
