The Galotière distillery is housed in half-timbered buildings from the 17th century typical of the Pays d'Auge. Its owners have their hearts set on preserving old Norman apple varieties that are disappearing. They planted more than 50 different species and obtained a PDO (Protected Designation of Origin) organic farming label in 2000. Their Pays d'Auge AOC Calvados are made with fermented cider rested on lees for a year. An antique pot still from Charente allows a double distillation of the Calvados before aging in oak barrels.
