The preparation of 'popoi', this dough made of taro or uru which is one of the basic foods on the island of Rapa, is the business of women. It is often a young and vigorous woman who is responsible for crushing the boiled taro or uru on a flat stone using a stone or a brick until it is reduced to a porridge and forms a sticky dough. She then kneads this dough to which she adds water and punches it with her fists and a mortar.
