The great diversity of soils, subsoils and microclimates have led Alsatian producers to preserve a wide range of grape varieties. They privilege the plant biodiversity and offer, for each of the selected grape varieties, optimal conditions of expression. The climate in Alsace is also characterized by alternating hot days and cool nights in autumn, conditions conducive to a slow and prolonged ripening of the grapes.
