Since 2010, Benoît Marguet has chosen to work the soil of his vineyards using only a draught horse, in order to improve the well-being of the land. The horse is a unique link between the elements of the terroir: mineral (chalk), plant (vine and endemic flora) and animal (fauna and human). Although slower than a tractor, the horse is beneficial for the aeration of the soil. Maison Marguet works its wine by gravity and the individual fermentation of the ‘lieux-dits’ is carried out in oak tuns and barrels with practically no use of sulfites.
