The different varieties of lavender are melliferous plants highly prized by bees. They are particularly sought-after by beekeepers for the abundance of their nectar at the origin of a monofloral, pale yellow, very fragrant, and finely crystallized honey produced in large quantities. Their flowering extends from March to May for the earliest species, such as the stoechas, and from June to August for the others.
