The picking of Grasse jasmine (Jasminum grandiflorum) takes place between August and October. The harvest is done in the morning, ideally at daybreak, when the flower exhales its most intense fragrance. It is a long, tiring and delicate job which requires a lot of dexterity to cut off the jasmine flower without damaging it. You must first select the mature flowers and then detach them one by one from the foliage and the stem by turning your hand a quarter of a turn without touching the bud flowers. The harvest is delivered to factories early in the afternoon for immediate processing.
