The Giant clam, 'Pahua', is widely consumed in French Polynesia but banned from export to mainland France. Polynesians usually eat it raw, with coconut milk, or cooked in curry. It can also be fried, prepared in salad or cooked in soup. Its muscle sliced into very thin marinated and spicy strips provides a delicious carpachio. The rest of the Giant clam can be cut into small pieces and cooked in curry like fish.
