'Popoi', this fermented dough made from taro tubers or uru fruits which is part of almost all the meals taken on the island of Rapa, is prepared outdoors in various places around the village. They must include a hearth, a water tap and several flat stones of about 3.2sqft (1m2) arranged in a circle to knead the dough. The first step of the preparation is to boil the fruits or tubers in large pots of water.
