Cinnamon is one of the sixty-five ingredients in Henri Bardouin pastis. It comes here in the form of rolls made of the inner bark of cinnamon trees, but all parts of the plant, including its flowers and fruits, are aromatic. Used by the Egyptians for corpse embalming, cinnamon would have arrived in France at the beginning of the 13th century. Long before pastis, it was found in hypocras and cinnamon broth, a drink and a broth from medieval times.
