Neufchâtel is a raw cow's milk cheese. Its bloomy rind is white and slightly fluffy, hiding a yellow paste that whitens at the heart and gives off a taste of mushrooms. Often considered the oldest cheese in France (1035), it is found within an 18-miles (30 km) radius around Neufchâtel-en-Bray. It has benefited from a Controlled Designation of Origin (AOC) since 1969 and is made exclusively with milk from Norman breed cows. They must have grazed at least 180 days in the year.
