Three-quarters of the two hundred or so bulls of the Blanc manade (herd) in Arles are bred for their meat. After three years of extensive grazing on the property that extends over a radius of 12.4 miles (20 km) in the heart of the Camargue Regional Nature Park, they are slaughtered at Alazard and Roux in Tarascon, the only slaughterhouses with that of Alès authorized for PDO meat. The carcasses then go to a cutting workshop. The meat, labeled as organic, is marketed in batches of 11 to 22 lbs (5 to 10 kg) and shipped to individuals throughout France.
