Camembert is a soft cheese made from raw milk. Its manufacturing process must meet numerous criteria in order to obtain the PDO label. The milk must come from Norman cows and not have been heated above 98.6° F (37° C), the temperature of the cow's udder. The milk curdles for about one hour before being placed in molds in five layers, where it would drain for at least six hours.
