Performed with a mechanical press or manually after vatting, pressing consists of bursting the grape berries to extract their juice. The winemaker decides on the strength and the pressing time, which differ according to the type of wine desired, white or red. This extraction step has an effect on the quality and tannic structure of the wine. Too violent, the pressing risks releasing bitter and vegetal flavors.
