L’ostréiculture est très présente et d’excellente qualité en raison d’un milieu aquatique très surveillé.
L'étang de Thau (en occitan : Estanh de Taur) est le plus grand plan d'eau de la région Occitanie. Il a une superficie d'environ 7 500 hectares et une profondeur moyenne de cinq mètres (le point le plus profond étant le trou de la Bise qui atteint la profondeur de 32 m). Sa grandeur et ses profondeurs, qui le distinguent des étangs de la région, s'expliquent par la géomorphologie du secteur ; il est le synclinal d'un plissement dont l'anticlinal est la montagne du Gardiole au nord-est. Il est relié à la mer Méditerranée par des graus à Marseillan (le Pisse Saumes) et à Sète.
