Working the vines with a draught horse allows great precision. The horse feels the roots with its hooves and avoids them, whereas a tractor crushes them. The vines have a longer life span. Horses do not always walk in the same place which makes the soil more aerated. The better the soil, the better the harvest. The pace is slower (one row instead of three with a tractor). The physical effort is greater for the man than for the horse, but the quality of the harvested grapes is the ultimate reward. More and more winemakers are returning to these less intrusive ploughing methods.
