During the summer, the pollination of vine flowers allows the formation of small green buds, the future grape berries. This stage of the vine’s vegetative cycle is called fruit set. The berries get bigger, turn darker and soften; the acidity decreases sharply while the sugar content increases rapidly. The winemaker must watch the grapes until they reach maturity. The harvest can then begin, generally in August or September.
