The oyster-breeding tables of Leucate on the lagoon

Near the small fishing village of Leucate on the Salses-Leucate lagoon, oyster-breeding tables take up a large part of the landscape. The oysters bred on the lagoon are famous for their firmness and their light nutty aroma. These distinctions are due in part to the table management system which mimics the rhythm of the tides and keeps the oysters in semi-immersion. As France is one of the countries consuming the most oysters, those of Leucate are famous throughout the territory.
