From mid-August, the harvest begins in Burgundy. This period marks the end of the long process of working and cultivating the vine. The 10-stage vineyard life cycle ends with the ripening of the grapes, it is an important moment for the fruits which gain in sugar and lose in acidity. The harvest marks the beginning of a new life for the grapes.
