The master picker of the Distilleries et Domaines de Provence in Forcalquier begins picking the aromatic plants needed to make Henri Bardouin Pastis on the Montagne de Lure or Mourres plateau at the end of the morning when the dew has evaporated. He chooses the beautiful leaves and some specific flowers. Once well dried, the bouquets are stripped by hand to keep only the best.
