The Malherbe terroir is one of the two that form the Château Malherbe estate in Bormes-les-Mimosas in the Var department. It produces prestigious cuvées that are available in white, red, and rosé. The Malherbe white and great white vintages, the most famous, come from Rolle and Sémillon grape varieties. They are obtained after a maceration of single grape varieties at a low temperature. Nevertheless, their aging and vinification differ. They are done on fine lees made of wood for the white, while the great white matures on fine lees in demi-muid of French oak for eighteen months with regular stirring.
