Yam and taro which make up 'bougna', the Kanak stew, are not simple vegetables at the basis of the local diet. Yam in particular is a sacred tuber whose vegetative cycle - from the fields clearing in June to the harvest which is the subject of a great celebration in March - still serves as a calendar. Yam is also a symbol of virility while water taro represents womanhood.
