There are no less than 7 different regions in France where oysters are produced. This makes France the leading producer and consumer country in Europe. The oysters from the production of each of these regions all have different visual and taste characteristics: those from Normandy have, for example, a salty taste and a rather grey or blue-green color while those produced in the Mediterranean at Leucate in particular, are famous for their delicate nutty aroma and ashy color.
