During summer, before the harvest, the winegrower must perform three specific tasks: lifting, trimming and stripping. The lifting allows the vine to be held between two wires to prevent it from growing in all directions. The trimming consists of cutting off the superfluous end of the twigs to control the growth of the grape. Leaf stripping removes leaves growing too close to the grapes to perfect their ripening.
